Baked Pork Chops yep I said it "Baked"

So I was being lazy and decided to bake my pork chops.

enough Pork Chops to feed your family
rosemary
garlic powder
e.v.o.o.

Turn your oven on 350*
grease a 9x13" pan with e.v.o.o. lay your pork chops on the pan. Sprinkle the pork chops (on both sides) with generous amounts of both garlic and rosemary.
Bake for 20 mins flip and bake for another 40 mins.
Serve with your favorite vegetable sides.

Pumpkin Pie Dip

8 oz. cream cheese, softened
2 cups powdered sugar
1 cup pumpkin
1/2 cup sour cream
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger

In a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in the pumpkin, sour cream, cinnamon, pumpkin pie spice and ginger until blended.
Eat with gingersnaps, cinnamon graham crackers, or whatever your tummy desires.

Another Dip...that is sooooooo yummy

I got this recipe from my sister-in-law it's so easy and very good. Thanks, Chrissy!

One handful of currants (I used raisins and chopped them up real fine)
2-3 green onions, diced
8 oz. cream cheese, softened
1/4 to 1/2 tsp. slap ya mama spice (more or less according to your taste)

Mix all the ingredients together, you can serve immediately or make the night before.

Serve with tortilla chips, crackers or vegetables.

Noodles with Chicken and Veggies

This is one of my daughter's favorite dinners.

2 lbs chicken, diced
2 T extra virgin olive oil
1 tsp garlic
1 tsp pepper
1/2 tsp garlic salt
2 zucchini squash, medium size and diced
2 yellow squash, medium size and diced
1 cup italian dressing (i use Ken's Lite Northern Italian w/Basil & Romano)
1 pkg egg noodles
parmesan cheese (freshly grated is best, but use what you have)


Preheat a pan with e.v.o.o when the oil starts to dance put in the diced chicken. Sprinkle with garlic, pepper, and garlic salt cook until done.
Add squash and toss with italian dressing. Cover and Cook for 15-20 mins.
Meanwhile boil a pot of water and add the egg noodles. Cook according to package instructions.
Place a serving of noodles on a plate and top with chicken and veggies. Generously sprinkle with parmesan cheese.

Fall Country Ribs

These ribs are perfect for a fall dinner....They're sweet and great with mashed potatoes and green beans.

3-4 lbs. boneless country pork ribs
1/4 cup extra virgin olive oil
steak seasoning (montreal steak seasoning is yumdigity)
1/4 cup syrup (what ever you have in the cupboard)
3/4 cup simple syrup (1 part sugar & 1 part hot water)
1/2 cup apple butter
1/4 tsp. of each : salt, pepper, paprika, garlic powder and onion powder

Preheat the oven to 350*
Place the ribs on a parchement lined 9x13" pan. Lightly brush olive oil on both sides of ribs, generously sprinkle the steak seasoning on the ribs. Bake for 30 mins.
While the ribs are cooking in a small bowl mix together: syrups, apple butter and seasonings. Mix well and let set.
Turn oven down to 325* and baste the ribs with the syrup mixture. Bake for 1 1/2 hours, basting every 20 mins.
Slice the onion and set aside.
Turn the oven back up to 350* and baste, then place the sliced onion on top of the ribs and baste the onions using the rest of the syrup mixture. Bake for 30 mins.
