Noodles with Chicken and Veggies

This is one of my daughter's favorite dinners.

2 lbs chicken, diced
2 T extra virgin olive oil
1 tsp garlic
1 tsp pepper
1/2 tsp garlic salt
2 zucchini squash, medium size and diced
2 yellow squash, medium size and diced
1 cup italian dressing (i use Ken's Lite Northern Italian w/Basil & Romano)
1 pkg egg noodles
parmesan cheese (freshly grated is best, but use what you have)


Preheat a pan with e.v.o.o when the oil starts to dance put in the diced chicken. Sprinkle with garlic, pepper, and garlic salt cook until done.
Add squash and toss with italian dressing. Cover and Cook for 15-20 mins.
Meanwhile boil a pot of water and add the egg noodles. Cook according to package instructions.
Place a serving of noodles on a plate and top with chicken and veggies. Generously sprinkle with parmesan cheese.

Fall Country Ribs

These ribs are perfect for a fall dinner....They're sweet and great with mashed potatoes and green beans.

3-4 lbs. boneless country pork ribs
1/4 cup extra virgin olive oil
steak seasoning (montreal steak seasoning is yumdigity)
1/4 cup syrup (what ever you have in the cupboard)
3/4 cup simple syrup (1 part sugar & 1 part hot water)
1/2 cup apple butter
1/4 tsp. of each : salt, pepper, paprika, garlic powder and onion powder
large onion

Preheat the oven to 350*
Place the ribs on a parchement lined 9x13" pan. Lightly brush olive oil on both sides of ribs, generously sprinkle the steak seasoning on the ribs. Bake for 30 mins.
While the ribs are cooking in a small bowl mix together: syrups, apple butter and seasonings. Mix well and let set.
Turn oven down to 325* and baste the ribs with the syrup mixture. Bake for 1 1/2 hours, basting every 20 mins.
Slice the onion and set aside.
Turn the oven back up to 350* and baste, then place the sliced onion on top of the ribs and baste the onions using the rest of the syrup mixture. Bake for 30 mins.
